Gujarati tuvar ni dal

Ingredients

250 g Toor dal (dry)
1 tomato
1 tsp mustard seeds
1/4 tsp Hing
2 3/10 dried red chilli
5 1/2 curry leaves
2 tomato
1/2 tbsp minced ginger
2 tsp red chilli powder
1 tsp turmeric powder
1 tbsp coriander powder
1 1/2 tbsp Jaggery
Small handful boiled peanuts
100 ml soaked Tamarind or Kokum water
2 tsp Garam masala powder
Small handful fresh coriander leaves (Chopped)
Ghee for garnish
Oil
Salt

Directions

1.
Soak the toor dal for 6 hours and rinse well.
2.
Transfer to a pot with 1 chopped tomato and cook until soft. Then mash or blend.
3.
Heat some oil in a pot and pop the mustard seeds. Then add the hing.
4.
Add the dried red chilli and curry leaves and fry for a few seconds.
5.
Add 2 chopped tomatoes and the minced ginger.
6.
Add the chilli powder, turmeric powder and coriander powder. Fry for a minute.
7.
Add the jaggery and boiled peanuts.
8.
Add the dal and season well with salt. Add more water if needed.
9.
Cook for 5-6 minutes then finish with the tamarind and garam masala.
10.
Garnish with chopped coriander leaves and ghee.
