Ghanta Tarkari

Signature odia recipe cooked with lots of pulses and legumes. Bowl of nutrition and taste if you ask me.

Ingredients

1 Potato
1 cup chopped Pumpkin
1 Aubergine
1 Okra
5 1/2 Long beans
1/2 Saru
1 Ridge gourd
1 Carrot
1 cup chopped Cabbage
Turmeric
1/2 cup Green peas
1/2 cup Chickpeas
1/2 cup Black chickpeas
handful of peanuts
Salt to taste
Mustard oil
1 tsp Cumin seeds
1 tsp Mustard seeds
2 1/2 Dried red chilli
1 1/2 Bay leaf
1 1/2 tsp Ginger
1 Tomato
Hing
1 tsp Chilli powder
1 tsp Cumin powder
1 tsp Coriander powder
Garam masala
Small bunch of coriander leaves
Grated coconut

Directions

1.
First, chop your vegetables & keep them aside. Now in a pot, boil 5-6 cups of water. Add 1tsp of turmeric &salt to taste. Add the chopped vegetables (except okra) alongwith ½ cup of green peas, ½ cup of boiled chickpeas & black chickpeas into the pot. Also, add a handful of peanut to it. Now cover the lid & let it cook until all the vegetables are completely done.

Now in another pan or pot, add 2tbsp mustard oil. Add 1tsp cumin seeds & mustard seeds each along with dried red chilli & bay leaf. Saute it for a bit & then add ginger ,chopped tomatoes & okra and now cook it for a minute.
3.
Add in your spices like hing, small amount of turmeric, 1tsp each of chilli powder, cumin powder & coriander powder. Saute & cook the spices properly
4.
To it, add all your cooked vegetables. Saute together & cook for a minute .Add salt to taste & 1tsp of garam masala.
5.
Chop a small bunch of coriander leaves & add to it. Garnish it off with some grated coconut
